To provide a method for genetically engineered modification of potato to produce an amylopectin starch by substantially completely suppressing formation of amylose in a tuber of potato.
Genetically engineered modification of potato that inhibits formation of an amylose starch is described. Three fragments inserted into a potato genome in an antisense direction are also described. Further, an antisense structure, a gene and a vector having the above antisense fragments are described. Furthermore, a gene promoter coding the formation of a granule-bound starch synthase and its own gene are described. Also, a cell, a vegetable material, a tuber, a minute tuber and a seed having the above antisense fragment are described. Finally, just as natural or derivatised amylopectin starch originated from the potato modified by the genetically engineered method and the method for inhibiting the amylose formation in potato are described.
