Abstract:

To provide a method for easily producing a dairy product flavor good in flavor balance and having high intensity with excellent natural raw milk feeling without the need of any troublesome operations.

The method for producing the dairy product flavor comprises the following process: A collected flavor obtained by a relevant means such as thin-film distillation from cow milk and/or a dairy product is adsorbed to an organic polymeric adsorbent such as a polystyrene-based porous polymeric resin followed by desorbing the objective flavor with a desorbing solvent.
