PURPOSE: The anionic components are removed from milk to produce said modified milk which is disagreeable with no one and giving raw cream, butter and cheese with high digestivity.

CONSTITUTION: Milk is subjected to treatment with strong or weak anion exchange resin or electrodialysis with anion exchange diaphragm preferably under lower temperature conditions to remove the anionic components as lactic, phosphoric acids or others and the product is stored at low temperatures preferably.
