Abstract:

PURPOSE: To obtain a nonreducing sugar having a trehalose structure at the molecular end and another one having a trehalose structure inside the molecule both in high yield.
CONSTITUTION: A nonreducing sugar or a low-reducing sugar contg. the same is produced by treating a soln. prepd. by liquefying starch with a nonreducing sugar synthase and a starch debranching enzyme and/or cyclomaltodextrin glucanotransferase or with a nonreducing sugar synthase, a trehalose liberating enzyme, and a starch debranching enzyme and/or cyclodextrin glucanotransferase.
