Abstract:
PROBLEM TO BE SOLVED: To provide an oil and fat composition for cooking and a method for producing the oil and fat composition for cooking in which an increase in an acid value and an increase in a polymer amount at the time of cooking are suppressed.SOLUTION: There are provided an oil and fat composition for cooking which contains 1-5 ppm of silicone oil having kinetic viscosity at 25°C of 500-3000 mm/s in total, and 0.05-0.5 mass% of polyglyceryl fatty acid ester in total, where an average degree of polymerization of polyglycerol, which is constituted of the polyglycerol fatty acid ester, is 3-7, and an average degree of esterification is 45-80%; and a method for producing the oil and fat composition for cooking.SELECTED DRAWING: None
