Abstract:
PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsification jelly packed in a paper container, high in calorie and protein, including vitamin C (ascorbic acid or its salt) and capable of suppressing jelly discoloration with time due to the oxidization of the vitamin C.SOLUTION: The oil-in-water type emulsification jelly packed in a paper container including lipid, glucide, a protein of 3-15%, an ascorbic acid of 0.005-1% or its salt and lycopene, has a calorie of 1.5 kcal/g or more and is subjected to aseptic germicidal treatment. The content of the lycopene is 0.1-100 ppm, and a saturated fatty acid out of the constituent fatty acid of the lipid is 55% or more and has a pH of 5-8.SELECTED DRAWING: None
