PURPOSE: To improve agglutination and precipitation of thaumation and to improve sweetness of characteristic thaumatin long remaining in the mouth, by using thaumation together with an alkali metallic salt of alginic aid or a derivative of alginic acid.
CONSTITUTION: 1 pt.wt. thaumatin is used with ≤100pts.wt., preferably 1-10 pts.wt. alkali metallic salt of alginic acid or derivative of alginic acid. Thaumatin has about 21,000 average molecular weight, an alkali metallic salt of alginic acid or a derivative of alginic acid has 30,000-300,000 average molecular weight larger then that of thaumatin and the alkali metallic salt of alginic acid or the derivative of alginic acid is adsorbed on the surface of thaumatin molecule to protect thaumatin by coating. Further addition of ≤100 pts.wt. ascorbic acid or salt hereof based on 1 pt.wt. thaumatin to the blend can maintain prevention of agglutination and precipitation of thaumatin and eliminate sweetness (aftertaste) long remaining in the mouth.
