Abstract:

PURPOSE: To obtain tasty bread by kneading wheat flour mixed with fermented milk to give broad dough, fermenting and baking the bread dough.

CONSTITUTION: Milk is blended with 0.1-2% sugar ester having 0-4 HLB and a starter and fermented to give fermented milk. Then 100 pts.wt. wheat flour is blended with 1-30 pts.wt.. fermented milk, water, a yeast plant, sugary salt, etc., and kneaded to give bread dough, which is fermented and baked.
