Abstract:

PROBLEM TO BE SOLVED: To obtain a formulated rice flour that can produce frozen rice-flour dumplings which can be readily thawed at the refrigeration temperature and resisting to hardening for a long period of time, even when the refrigeration is continued after thawing, by formulating α-form crosslinked starch flour, glycerol fatty acid ester and starch-hydrolyzing enzymes thereto.
SOLUTION: Refined rice flour as a main starting material of dumplings (preferably in an mount of 10-20 wt.%) is mixed with an α-form crosslinked starch flour, preferably in an amount of 0.05-0.2 wt.%, and a glycerol fatty acid ester, preferably in an amount of 0.05-0.2 wt.%. This formulated rice flour is kneaded together with an equal amount or more amount of water, formed, boiled, cooled in water, drained and finally refrigerated, thereby, the objective frozen dumplings are produced.
