Abstract:
To provide a production method of a starch-containing plant raw material causing no deterioration of a texture due to retrogradation of a starch, and also to provide a starch-containing plant blended food without influence of texture deterioration due to retrogradation of a starch.SOLUTION: A production method of an enzymatically decomposed starch-containing plant paste comprises the steps of: (1) adding cellulase to a starch-containing plant paste; and (2) adding α-amylase to a starch-containing plant paste. (1) and (2) are preformed simultaneously or in the order of (1) and (2).SELECTED DRAWING: None
