Abstract:

PURPOSE: To obtain the title healthy and tasty meat by immersing thin slices such as of beef or pork in boiling water in a short time for boiling followed by immersing the slices in cold water to effect harshness removal and chilling.

CONSTITUTION: Thin slices such as of beef or pork are immersed in boiling water in a short time for boiling; and immediately after that, these slices are immersed in cold water to effect harshness removal and chilling, thus obtaining the objective 'shabu-shabu' meat for preservation. It is preferable that the present meat be combined with at least drippings, vegetables, etc., in e.g. an aluminum container into a set.
