Abstract:

PURPOSE: To accelerate the growth of lactic acid bacteria and produce efficiently yogurt having improved taste, by adding lactic acid bateria to a solution containing ground edible wild plant added thereto, and fermenting the resultant mixture.

CONSTITUTION: A solution containing dissolved skimmilk powder, cow's milk, sugar, etc. and further 10W100% ground edible ild plants, e.g. ground juice of raw edible wild plants or extract or an extract obtained by decocting dried edible wild plants of fine powder of dried edible wild plants is sterilized at about 90°C for about 5min, cooled to about 40°C, and lactic acid bacteria, e.g. Lactobacillus or Streptococcus, are added thereto and cultivated in pyrostat at 37W40°C for about 18W20hr. After completing the fermentation, the mixture is frozen.
