Abstract:
PURPOSE: To reprocess a bean-curd refuse in a process for producing a tofu (soybean curd) and use the resultant reprocessed bean-curd refuse as a raw material for the tofu.
CONSTITUTION: A raw material for tofu is obtained by hydrolyzing a bean-curd refuse with a cellulase or a hemicellulase agent which is an enzyme produced from the genus Trichoderma or Aspergillus and using the resultant product therefor.
