Abstract:

PURPOSE: To obtain ice grains capable of retaining dried state without forming the mass of ice grains by sublimation and coagulation, dissolution and refreezing of ice grains in the production of ice cake and provide a method for producing ice grains.

CONSTITUTION: Ice grains having ≤5mm particle diameter are mixed with dried powder of a water-absorbing substance for food and the mixture is combined with one or more kinds of a sweetener, a perfume and a pigment at a temperature not higher than the melting point of ice in order to prevent formation of ice mass due to solidification of ice grains. The mixed ratio of the water-absorbing substance to the ice grains is 0.1-15%(W/W).
