Abstract:
To provide a method for producing a slowly digestible starch useful in edible products including nutritional supplements.
The method for producing a composition comprising a crystalline linear α-glucan comprises the steps of cutting off branches of at least 90% of a low amylose starch particularly with isoamylase, crystallizing the starch whose branches are cut off, and drying the highly crystallized starch whose branches are cut off.
