Abstract:

PURPOSE: To obtain a soy sauce for ASAZUKE, capable of readily and safely preparing ASAZUKE even in a general home within one hr even under a desalted condition, and that without requiring labor of, e.g. crumpling with hands.
CONSTITUTION: This soy sauce for ASAZUKE contains characteristically soda water in an amount of 0.1 to 3.5kg/cm2 at 20°C. This sauce may contain a bicarbonate salt and/or a carbonate salt and an organic acid.
