Abstract:

To obtain a stabilizer showing stabilizing effects higher than a conventional ascorbic acid stabilizing technology, applicable to various uses and a preparation containing the stabilizer.

A soluble egg shell membrane is used as a stabilizer for an ascorbic acid. Preferably an egg shell membrane made into a soluble state obtained by hydrolyzing an egg shell membrane collected from a bird egg is used as the soluble egg shell membrane.
