Abstract:

To provide Tempura (Japanese-style deep-fried food) mix powder with which a time for oil cooking is reduced and Tempura crispy and crunchy even when time passes is produced, and to provide Tempura.

The Tempura mix powder contains modified rice flour which is produced by applying at least one selected from compression force, impulsive force, frictional force and shearing force to rice grains or rice flour, and has a swelling degree of 4.5 and amilograph gelatinization highest viscosity of 500 BU. The Tempura is obtained by preparing batter using the Tempura mix powder, making the batter adhere to ingredients, and frying the batter-adhering ingredients with oil.
