Abstract:

PURPOSE: A fish in berry is cut to open at the lower part between gills and a separately dried roe is inserted from the cut opening into its abdomen in the lengthwise direction, then the fish is smoked to give smoked fish with less deformation through simple processes.

CONSTITUTION: A fish in berry such as sweet fish (AYU) is cut to form an opening 4 at the lower part 3 between gills 2 and the internal organs are taken out. Then, it is washed with water, salted and subjected to pre-drying by hanging. At about the time when its surface skins dry, separately and previously dried roe is inserted from the opening 4 into the ovary in lengthwise direction. The fish is further dried and smoked to give the objective product.

EFFECT: The dried fish has moderate swelling of the stomach.
