To provide a water-dispersible plant sterol preparation capable of stably and uniformly dispersing a plant sterol into water or a water-soluble component-containing aqueous solution, an oil and fat-containing water-dispersible plant sterol preparation, a plant sterol-dispersing aqueous solution, a plant sterol-containing oil-in-water type emulsified material and a plant sterol-containing food and beverage.
The water-dispersible plant sterol preparation comprises 0.1-30 mass% plant sterol and 69-98.9 mass% one or more kinds of polyglycerol fatty acid esters as emulsifying agents. In the water-dispersible plant sterol preparation, HLB value of the emulsifying agents in whole system of the water-dispersible plant sterol preparation is 7-13. The oil and fat-containing water-dispersible plant sterol preparation comprises 0.1-30 mass% plant sterol, 69-98.9 mass% one or more kinds of polyglycerol fatty acid esters as emulsifying agents and 0.01-20 mass% oil and fat. In the oil and fat-containing water-dispersible plant sterol preparation, HLB value in whole system of the oil and fat-containing water-dispersible plant sterol preparation is 7-13.
