Abstract:
PURPOSE: To prepare yogurt having low calorific value and having nearly same taste, texture, combined feeling of taste and flavor, etc., as those of conventional yogurt, by using aspartame in combination with maltitol as sweeteners.
CONSTITUTION: In the preparation of yogurt by conventional process, aspartame and maltitol are used as sweeteners at a sweetness ratio of 3:7W8:2.
