Abstract:
To provide an unconventional ginger-containing composition free from the need of an additive, and to provide a food made by using the ginger-containing composition.SOLUTION: A ginger-containing composition contains a milk raw material of 45 wt.% or more and 99 wt.% or less, and a ginger powder of 0.9 wt.% or more and 3.4 wt.% or less. It is preferable that an unmodified whey protein nitrogen content of the milk raw material is 6 mg/g or more, and a weight ratio of the unmodified whey protein nitrogen content to the ginger powder is (0.17:1)-(0.8:1). Ginger pudding can be produced by mixing the ginger-containing composition with warm water.SELECTED DRAWING: None
