Abstract:
PROBLEM TO BE SOLVED: To provide a powder composition for gelatinization by adding it to various juices, milk, soybean milk, acidic milk beverage, syrup of canning or the like with powder form, not based on conventional liquid desert base.SOLUTION: There is provided a desert base with powder form which becomes gelatinous article with homogeneity and good texture and flavor by adding a composition by mixing powder of calcium salt of 5 to 40 wt.% and phosphoric acid salt of 10 to 50 wt.% with a powder of low methoxyl pectin of 20 to 60 wt.% of 2 to 6 g to 100 mL of various beverages such as milk, various juices, soybean milk, acidic milk beverage and syrup of canning.SELECTED DRAWING: None
