Abstract:
[Problem] To impart a vivid color to processed food products containing an anthocyanin pigment. At that time, it is desirable to use a conventional food product that is safe and inexpensive, without adding a coloring agent, and to avoid imparting a foreign taste to the food product. [Solution] A suitable amount of a yeast extract having a peptide content of 5 mass% or higher, an RNA content of 5 mass% or higher, a free amino acid content of 4 mass% or lower and, preferably, a dietary fiber content of 15 mass% or higher is added to an anthocyanin pigment or a conventional processed food product that includes an anthocyanin pigment.
