Abstract:
An emulsion gel for 3D printing of a fat substitute, and a preparation method therefor. A glycyrrhizic acid aqueous solution and grease are mixed and emulsified to obtain an emulsion; negatively charged glycyrrhizic acid is adsorbed on the water-oil interface; and positively charged chitosan is then added thereto, such that electrostatic crosslinking is generated between oil drops to form a three-dimensional network structure, so as to prepare an emulsion gel. The emulsion gel has a relatively high stability, relatively strong mechanical properties and a good shear thinning performance, thixotropic performance and temperature response performance, and can be used as a 3D printing ink to print an emulsion gel type fat substitute in order to replace traditional plastic fat.
