Abstract:
A process for manufacturing frozen noodles, including a step for freezing raw noodle strands which are obtained by subjecting a noodle dough which contains 0.01 to 0.5 part by mass of alginic acid relative to 100 parts by mass of a raw material powder to extrusion under a pressure of 80 to 200kgf/cm2.
