Abstract:
Low-phosphorus milk wherein only the phosphorus content is selectively reduced and a process for its production. This milk contains 1.0 to 2.0 g of phosphorus per 100 g of protein, so that the ratio of phosphorus to calcium is about 1:2 by weight, which is the same as that of human milk. This ratio is most suitable for absorption of calcium, and the milk is therefore suited as food for kidney patients and the aged having a reduced calcium absorbency and patients suffering hyperphosphatemia. Further, since the contents of the milk other than phosphorus remain unreduced, the value of the milk as the perfect food is maintained. The low-phosphorus milk can be produced by adding an acid and/or rennet, collecting coagulated casein, removing free phosphoric acid contained in the remaining whey by precipitation with calcium, adding thereto the above-collected casein, and emulsifying the resulting mixture.
