Abstract:
[Problem] To make it possible to provide fresh and high-quality olive oil to consumers. [Solution] The present invention comprises a freezing stage, a thawing stage, and an extraction stage. During the freezing stage, olive fruits are rapidly frozen after harvesting. During the thawing stage, after the frozen olive fruits have been held in cold storage for a constant time period, the olive fruits that have been held in cold storage are slowly thawed. During the extraction stage, olive oil is extracted from the olive fruits after thawing.
