Abstract:
To provide a production method of delicacy-like food with good texture, in which a soybean protein is efficiently used.SOLUTION: Water in an amount in the specific range of 100 to 300 pts.wt. per 100 pts.wt. of textured soy protein is added to the textured soy protein and is absorbed therein, the textured soy protein is then squeezed by pressure while heated at 100°C or higher, accordingly a delicacy-like food with reduced thickness and good texture can be obtained.SELECTED DRAWING: None
