Abstract:
PROBLEM TO BE SOLVED: To provide a highly mellow fermented alcoholic beverage having after-ripening hop-like mellow taste and body of hop imparted thereto, and also having good bitterness by causing the change resembled to the after ripening in a hop bitterness component in a production process of the fermented alcoholic beverage without passing a conventional after-ripening step of the hop to control the quality of the bitterness component of the added hop in the fermented alcoholic beverage obtained by adding the hop; and to provide the method for producing the fermented alcoholic beverage.SOLUTION: The highly mellow fermented alcoholic beverage having the after-ripening hop-like mellow taste and the body of the hop, and the good bitterness without hop fragrance like green grass is provided by controlling the bitterness component of the fermented alcoholic beverage having the hop added thereto so that (1) the S-fraction rate may be not less than 0.38, (2) the bitterness value (B. U. value ) may be not less than 19 and less than 33, and (3) the content of linalool may be not more than 6.8 ppb. The control of the S-fraction rate, the bitterness value (B. U. value) and the content of the linalool can be carried out by the control of a boiling time after adding the hop in a hop bitterness component-extracting step.
