Abstract:
PROBLEM TO BE SOLVED: To provide a bottled beverage containing carbon dioxide capable of maintaining the rich and deep taste characteristic to woody components derived from a wood container such as barrel or timbers, while the astringent taste of woody components is inhibited to achieve a refreshing and sharp taste.SOLUTION: In a beverage containing (A) 0.1 to 10.0 ppm of gallic acid and/or 0.1 to 10.0 ppm of sinapyl aldehyde, (B) 0.10 to 120.0 ppm of naringin, and (C) carbon dioxide, the ratio of the value obtained by adding 0.6 to the larger one of the gallic acid content and the sinapyl aldehyde content to the naringin content is 0.015 or more.SELECTED DRAWING: None
