To obtain a holding agent containing a sludge by-produced in a process for producing a tea beverage, capable of preventing the degradation of a delicious nucleic acid ingredient, such as inosinic acid, adenosine monophosphate or guanylic acid, originally contained in or added to a food such as meat or vegetable, and enabling to accumulate the delicious ingredient.
This agent for holding a delicious nucleic acid ingredient in a food contains a sludge which is by-product in a process for producing a tea beverage. The agent is added to a food, e.g. a meat such as animal meat, fowl meat, fish or shellfish or the dried product of the meat, a vegetable, a food containing egg, or a food containing ham, sausage, mayonnaise, cod ore, salted cod roe with red pepper, soused cuttlefish, fish guts pickled in salt or soybean protein, in an amount of 0.01-5wt.% to stabilize the delicious taste of the food.
