Abstract:
PURPOSE: To provide a nonfat cheese analogue showing the taste, body and texture of a cheese. CONSTITUTION: This cheese analogue consists of a mixture of about 15 to 35% solidified skimmed milk product having <=2% fat content, about 15 to 35% dry granulated rennet casein, about 1 to 3% edible emulsifier salt, aroma and acidifier, and about 30 to 65% water. The dry rennet casein is hydrated by the effect of the emulsifier salt while stirring in the water content at about 160 to 200 deg.F (about 71 to 93 deg.C) till a plastic and homogeneous body substantially containing no nonhydrated rennet casein particles is obtd. The edible emulsifier salt is added by about 2 to 15wt.% of the particulate rennet casein. The emulsifier salt is selected from alkali metal salts of phosphoric acid, citrates and these mixture.
