Abstract:
PURPOSE: To provide a cake-baking process enabling the shortening of the baking time.
CONSTITUTION: The baking time of a cake is shortened by baking a cake dough in two stages comprising the 1st heating stage to heat a cake to a state immediately before the rapid expansion with a high-frequency heating means and the 2nd heating stage to bake the above cake using a radiation-heating means.
