Abstract:

PURPOSE: To obtain the subject product containing an oil-absorbing substance such as starches or cyclodextrins and capable of preventing formation of creases on the surface of bread after heating butter roll, etc., with an electronic oven.

CONSTITUTION: To objective product containing an oil absorbing substance (preferably β-cyclodextrin), preferably at a weight ratio of 2-10% based on liquid egg or egg york and suitable to heating by electronic oven. After the oil absorving substance is previously sufficiently dispersed into water or dissolved in water, the oil absorbing substance is preferably previously and suficiently dispersed into water or dissolved in water.
