Abstract:
PURPOSE: To obtain a baked product in which such problems as decrease in a crisp texture and volume due to transfer of the water content are avoided by forming a pastry anchor layer with a waterproof edible protective layer on a puff pastry layer. CONSTITUTION: A pastry anchor layer 4 with waterproof edible protective layers (preferably aceto-fat layers) 5, 6 are formed on a puff pastry layer 3 to obtain the product of the purpose. The product is obtd. by, for example, laminating a short crust dough comprising fluor, shortening, salt and water on a normal puff pastry dough comprising fluor, salt, margarine and water, baking to form an anchor layer 4 comprising a short crust layer, and applying thin layers of an aceto-fat to form waterproof layers 5, 6.
