Abstract:

To prepare a cake having completely new appearance and new flavor by composing the shell of cram puff of a hollow material and providing a film molded and baked in a desired fixed form on the surface of this shell on the other hand.

For example, the dough of usual cream puff shell is prepared by adding 50wt.% butter, 130wt.% water and 130wt.% eggs to 100wt.% wheat flour (weak flour). Concerning this dough, the cream puff dough of 12g to 13g is squeezed out in one side of joint dies, fixed by screws while matching upper and lower dies, put in an over and baked at 220°C for 13 minutes so that a hollow cream puff 21 matching its external shape with the form of die can be provided. Thus, the shell 21 matched with the form of die is prepared, custard cream 3 is injected into this shell and the objective cake 1 can be provided.
