Abstract:
PURPOSE:To provide daily dish breads for reheating, getting excellent taste, flavor and palatability throughout the surface and the core of the bread by a brief heating with an oven toaster, by wrapping a loaf of bread with a (semi) transparent heat-resistant polymer film having a melting point higher than a specific level. CONSTITUTION:The film to be used in the present process is a transparent or semi-transparent heat-resistant polymer film having a melting point of >=270 deg.C. Concrete examples of the preferable film are polyimide film, polyphenylene sulfide film, etc. Daily dish breads for reheating are packaged with the heat-resistant polymer film. The polymer film keeps the function of packaging material even by heating the packaged daily dish breads with an oven toaster for several minutes before serving as a dish. The evaporation of water from the daily dish breads can be prevented, the scorching of the bread surface can be suppressed, and the temperature in the bread can be easily raised to enable the restoration of the bread to the freshly baked state.
