Abstract:

PURPOSE: To obtain decocted cacao beans having excellent flavor in high yield, by blending cacao nibs from which periderm is removed with a saccharide in a powdered state and decocting.

CONSTITUTION: Cacao beans of raw material are lightly decocted to remove periderm, ground, separated into shell and jam to give 20W95wt.% cacao nib, which is blended with 80W5wt.% powdery monosaccharide and/or disaccharide to give a mixture. Then the mixture is decocted at 130W170°C for 15W45 minutes.
