Abstract:
PROBLEM TO BE SOLVED: To provide a defoaming agent having good dispersibility and excellent defoaming performance to foamed bubbles when foaming bubbles under high temperature boiling at the production of foods accompanied by high viscosity based on containing much saccharide or viscosity increase with time by heat treatment and to provide foods containing the same.SOLUTION: A defoaming agent composition for foods containing respective components such as (A) a sorbitan mono-fatty acid ester esterified with a 12-20C fatty acid and (B) a polyoxyethylene sorbitan mono-fatty acid ester esterified with a 18C fatty acid and being a content of (A) of 92.0-99.9 mass% and a content of (B) of 0.1-8.0 mass% and foods containing the same are provided for solving the problem.SELECTED DRAWING: None
