To obtain a dry carotenoid-oil powder resistant to degradation caused by exposure to oxygen, high in effectiveness and capable of being dispersed in water.
Approximately 4.4wt.% of a carotenoid is dispersed in an oil, and the obtained carotenoid-oil dispersion is ground with a ball mill into a carotenoid-oil dispersion having diameters of approximately <1μm. Separately, starch-capsulating agent, sugar, and an antioxidizing agent are dissolved in water to prepare the capsulating mixture. The sugar is added in an amount of approximately 5wt.% based on the dry contents of the mixture. The ground carotenoid-oil dispersion is mixed with the capsulating mixture with a high pressure homogenizer, and the produced emulsion is dried with a spray drier to obtain the objective powder.
