PURPOSE: To provide an emulsified composition enabled in micro-emulsification at ambient temp., prevented from deterioration at high temp. and enhanced in safety, obtained by compounding aqueous phase components such as an acidic amino acid salt, water soluble natural polysaccharides or amino acid and an oily phase component.
CONSTITUTION: An emulsified composition consists of a solution of one or more of a component selected from an acidic amino acid salt comprising one of glutamate and aspartate or a mixture thereof, one or more of water soluble natural polysacchrides such as xanthane gum, neutral or basic amino acid such as glycine or serine, one or more of a solution selected from a water soluble polyhydroxy compound such as glycerine and water, and an oily phase component such as squalane or octyl dodecyl myristate. An aqueous phase component is further added to this composition to obtain an oil in water type emulsion. By this compound, a transparent or translucent viscous, liquid or gel like emulsified composition is obtained. This composition can be widely utilized in fields of food, medicine or cosmetics.
