To obtain a yeast strain capable of converting glucose into erythritol in a simple medium.
This yeast strain is capable of converting glucose into erythritol and exhibits the following identification characteristics. The yeast strain has no motile spore, has no septate mycelium, no asexual reproduction and no kidney form cell, has a connidium arbitrarily formed on a denticle instead of a long projection, has no injected conidium, has no germination being not a unipolarity on a wide base part, has an acropetal chain of budding connidium, has a chlamydospore of a dark color thick wall, is capable of assimilating sucrose, glycerol and maltose, is incapable of assimilating lactose, is incapable of fermenting galactose and is incapable of growing at 25°C to 36°C. The yeast strain is provided with an accession number PTA-1,227, PTA-1,228, PTA-1,229, PTA-1,230, PTA-1,231 or PTA-1,232 by American Type Culture Collection. This variant is derived from the yeast strain.
