Abstract:

To provide easily producible fermented soybean paste suppressed in change of tone of color, excellent in flavor through maintaining original flavor of fermented soybean paste, easy to continuously ingest, and having physiological function such as blood pressure lowering action.

The fermented soybean paste contains 0.01-5 mass% of flavonoid satisfying Formula (1): Y/(X+Y)=0.05-1 In the formula, X indicates the number of OH groups bonded to a benzene ring in one flavonoid molecule, and Y indicates the number of OCH3 groups bonded to a benzene ring in one flavonoid molecule.
