Abstract:

PURPOSE: To provide a food preerving agent accelerating a story antibacterial activity and having excellent safety and preservability by combining cholic acid (salt) with protamine extracted from a fish testis.

CONSTITUTION: At least protamine extracted from a fish testis is combined with cholic acid and/or a cholic acid salt to provide the objective food preserving agent. The agent is added to natural foods, food raw materials, semi- preocessed foods, processed foods, beverages, alcoholic liquors, seasonings, etc.
