Abstract:

PURPOSE: To provide a freeze-resistant oil and fat suitable for improving the freeze-resistance of an oil and fat-containing food such as salad oil, dressing, mayonnaise, frozen cake such as ice cream or frozen dough, to provide a process for producing the freeze-resistant oil and fat and to provide a freeze-resistant food prepared by using the oil and fat.
CONSTITUTION: The objective freeze-resistant oil and fat contains ≥10% of a mixed acid group triglyceride (U2M and UM2) composed exclusively of an unsaturated fatty acid group (U) and a medium-chain saturated fatty acid residue (M) at a U2M/UM2 ratio of ≥1:3. It can be produced by introducing a medium- chain fatty acid residue (M) into an oil and fat exhibiting liquid state at normal temperature by ester interchange to keep the total amount of the mixed acid group triglyceride (U2M and UM2) in the total oil and fat to ≥10% and the U2M/UM2 ratio to ≥1:3. For example, sunflower oil is subjected to selective ester interchange with 5% tributyrin using a 1,3-site selective lipase to obtain an oil and fat having a melting point of as low as -34°C/DSC.
