Abstract:

To provide frozen dessert given with cold palate feeling with excellent melting feeling in the mouth while retaining smoothness and richness, in view of the fact that recently function demanded from a stabilizer changes from conventional function of improvement of production efficiency and relief of restrictions on distribution to function for making new palate feeling because of technical progress in production and distribution.

This frozen dessert stabilizer comprises using at least one kind of polysaccharides selected from carageenan, xanthan gum, gellan gum and agar, together with polyglutamic acid.
