Abstract:

To obtain the subject yeast capable of producing a bread of a good taste by performing a gene distructing treatment for NTH1 gene of a monoploid yeast capable of becoming a practical bread yeast by forming a diploid thereof.

This frozen dough resistant-practical bread yeast is obtained by performing a gene districting treatment for NTH1 gene (a neutral trehalase gene) of a monoploid yeast capable of becoming a practical bread yeast by forming a diploid thereof. A two of more ploid yeast obtained by crossing one or two or more of monoploid yeasts having the destructed NTH1 gene, e.g. Saccharomyces cerevisiae T154 (FERM-BP-5678) or Saccharomyces cerevisiae T207 (FERM-BP-5679), are excellent in freez resistance.
