Abstract:

PROBLEM TO BE SOLVED: To obtain a functional emulsion in which a functional substance insoluble or slightly soluble in water and oil is dispersed in the oil or water and which can be preserved for a long period.
SOLUTION: This functional emulsion comprising an E/O type emulsion or E/O/W type emulsion in which ethanol drops containing a polyphenol in a high concentration are dispersed in a vegetable oil, obtained by adding polyglyceryl oleate(PG) to ethanol and then stirring the mixture and the vegetable oil by an emulsification method such as a homogenizer method, a film emulsification method or a micro channel method.
