Abstract:
PROBLEM TO BE SOLVED: To obtain a xylitol hard candy having sufficiently improved moisture absorption and stability for keeping the shape, and further having an excellent cool feeling and taste.
SOLUTION: This hard candy is a composition comprising 30-95 wt.% xylitol in a solid material, and the remainder consisting of a hydrogenated polyol composition comprising 2-5 wt.% sorbitol, 7-14 wt.% maltitol, 9-16 wt.% maltotriitol, and 61-80 wt.% hydrogenated polyol having ≥4 polymerization degree, and the surface of the hard candy is covered with fine crystals of the xylitol.
